How this dish came to life
Cultural significance
Across Greece, the name and the recipe may change, but the meaning stays the same — family, tradition, and the taste of home.
step by step
Instructions
- 1
Finely chop the onion and garlic. Cut the sausages into rounds and dice the pepper.
- 2
In a pan, sauté the sausages until they release their fat, then remove them.
- 3
Add a little olive oil and sauté the onion and pepper until soft and golden.
- 4
Return the sausages to the pan.
- 5
Add the garlic and the tomato paste and sauté a little longer.
- 6
Deglaze with wine — white, ideally.
- 7
Add water or stock and drop in the hilopites.
- 8
One minute before the pasta is ready, add the eggs and stir well so the sauce turns thick and creamy.
- 9
Finish with crumbled feta, finely chopped parsley and wild oregano.
tips from the village —
Wisdom from grandmothers
- 01Let the sausages render their own fat first — that's the base flavour of the whole pan.
- 02The eggs go in at the very last minute, off a rolling boil, so they thicken the sauce instead of scrambling.
- 03Hilopites drink liquid fast; keep a little extra hot water or stock on the side.
- 04The oregano over the hot plate at the end is what ties the sausage, feta and tomato together.
